I use a Griffin iMic on my Dell laptop. You can find them in most Apple Centres around the place, for about AU$100, or you can pick them up from the states for US$35+pp
I've found it to be a nice versitile device, fully supported under WinXP (drivers are built-in), input only under Win2K, and fully supported under ALSA/Linux.
It's got a pretty good SnR and noise floor. That can be improved a little if you use an externally powered bus (USB hub).
It supports up to 24bit/48kHz in and out. I haven't tested if I can use it to output sound at the same time it's sampling though. YMMV.
I found it to be on-par with my Soundblaster Live! Value, but it's certainly not audiophile quality.
