You're supposed to wait until the caps open like an umbrella and the veil under them rips open before you chop 'em. Still be good tho.

That looks like a bountiful harvest, way to go I tried my luck with mycobags from sporeworks.com with an injectable self sealing opening for the shroom spores but it never produced the results you have, happy shrooming
