I'd do a lot... and I'd do it, fast.
1.) I'd buy a new house for my parents... with land, horses, and a private nine hole golf course for my father.
2.) I'd buy a new house for myself. Nothing too expensive. Probably in the $800,000 to $1,000,000 range... right on Bellingham Bay. Big pool... web and graphic development studio... music studio complete with turntables, mixers, cdjs, and a huge music library. I'd also have a massive Klipsch home theater system installed. (Probably a 7.1 with 8,000W of total power.)
3.) I'd invest $30,000,000 in various things... stocks, bonds, etc. I'd do it all through a trusted private accountant to ensure that it went to the right places at the right times. After I did all the other things on my list... I'd put the rest of it in bank accounts and let my family live off of it for the rest of their lives. (Slightly improved from what we already have... but nothing that extravagent.)
4.) I'd pay my girlfriend's way through school. I'd also pay for her sister, and I'd pay off her parents' mortgage and make sure their other financial concerns were taken care of.
5.) I'd buy myself a Lotus Elise and drop a 2,000W stereo system into it. I'd also buy my dad the biggest Dodge truck I can find, and my mom would get a nice BMW M5 in royal purple... her favorite color. My girlfriend would get Eleanor... the Shelby GT she's always drooling over. 
6.) I'd buy a sailboat... around a 40-foot. I'd take it all through the San Juans... constantly.
7.) I'd buy my mom and dad the land, permits, and materials to establish the coffee shop and book store they've always talked about running together.
8.) I'd take a vacation to Europe... then Africa... then Australia.
9.) I'd donate a buttload of cash to my university... and then I'd stand on the board of directors to ensure that it was spent as it should be spent.
10.) I'd drive down to Seattle... and I'd pick ten random homeless kids across the city. I'd give them $50,000 apiece and tell them to do something positive with their lives. (And I'd make damn sure that they did exactly that... Get them into homes, get them back into school... just generally on the right track.)
Not that I've ever thought about what I'd do with a lot of money before or anything.
