This is correct, I was going to post something similar myself. Some clubs DO use a stereo setup but this tends to be restricted to ones with a true sense of left/right sides of the whole club, usually as you say symmetrical ones with the booth in the centre at one end.
I think, if set up correctly, surround sound COULD work in these venues, but a club would have to invest a fair amount to even find out and until then people are unlikely to start producing music in 5.1 aimed for club play... and because of this the clubs are unlikely to try installing surround sound, so it's a bit of a catch 22 really!
But at the same time, how cool would it be if you were standing on the dancefloor and a cymbal sweep or whatever went straight around your head??! I'm all for the idea of surround sound in clubs, but I think it would have to be a whole industry movement to get it to work - and clubs tend to dislike ideas which result in them spending more money!
