anything you do with chicken can be done with tofu...there are different "firmness" levels of tofu, which is what makes or breaks a recipie and people's experiences with tofu. in general if you want to use tofu in say a stir-fry, burrito, grill, bake, etc use the firm or extra firm and marinate how you would chicken. if you freeze tofu for a day or two, then thaw it out and cut into slices it works really well in stew and soups and has a really weird texture that soaks up sauces really well.
don't get "silken" tofu unless you want to blend it smooth.
i'd avoid buying any pre-marinated or spiced tofus...they're a total waste of money. whole foods sells fresh tofu by the pound for 99cents. a pound lasts me 2 or 3 meals. try using crumbled tofu in lasagna to add protein instead of cheese. its really good if you use the right tomato sauce.
