Well, most of us Westerners are rather poor at distinguishing Koreans from Japanese or Chinese or Laotian etc. Asian is therefore a useful term.

Humans do this all the time and it's highly useful. You might say someone is tall/short, has red/blonde/dark hair, is white/black, male/female etc. On their own the terms are rather useless because they often describe a simply duality of two disparate terms, but when many such words are used together they add up to a surprisingly good general idea. This doesn't just apply to describing people either.

Apart from male/female, none of those are simple dichotomies, but rather one of several possible answers. So I don't see your point. No matter how badly you suck at distinguishing nationality, you should be able to spot Chinese from Indian from Iraqi from Siberian. The continent contains at least four different "races" that are clearly different. If you said "Asian" to a Brit, many would think you meant an Indian even if you were talking about a Korean. How is that a useful term?
