They aren't able to do that because there's no practical way to "reset" your wiimote once you've run it off-screen.
With a mouse, it's a simple process of lifting it off the table and placing it back where you feel comfortable as your "center", with the wiimote, they'd have to incorporate a button to halt the tracking of the wiimote in the IR field, and the wiimote is sorely lacking in buttons as it is.

Honestly, what is the point of this thread?
Those true nerds, that have forlorn their social lives and have played video games for the past 20+ years (like myself) know that the answer to this debate is as clear as the difference between night and day. Honestly, its not even a debate. After all, we have social etiquette that states it improper for me to point and laugh, generally ridicule someone that would be considered mentally challenged. It is the accepted norm of behavior. It is ridiculous to expect someone of this mental capacity to think and rationalize within the same context of a fully-developed mind.
We can list points, pros/cons of each, but the simple fact is that a control scheme that grants you the freedom of immersion, of altering your environment using inputs that are as instinctive and controllable as your own ability to walk and breathe is the clearly superior and ultimate form of gaming. The movements of the input devices are directly and strictly, in an analog fashion (despite its digital form of signal transmission) correlated to your onscreen avatar.
The only control schemes that will surpass the mouse+keyboard are in our near future, and gaining ground. These control schemes will eliminate the need for physical interaction, and will rely on our own thought processes to interpret signals and translate them to the virtual world. And guess what, due to the simple fact that all of these platforms are ultimately and undeniably first developed on a PC, they will inherently first appear on a PC for mass consumption.
I welcome your arguments...
