Even at events serving bottled beer, I've been forced to pre-open a large percentage of the bottles just prior to rush times. Any small amount of preparation time you can shave off is beneficial. Additionally, at sporting events in stadiums, you tend to have a large number of inexperienced staff who can't pour a beer properly. Having a machine that does it for them means you don't have to worry about that.

The cups are the main invention though, really. And since they would probably have a patent on them, they can charge basically whatever they can get away with for the cups. It's how lots of places do business anymore. Mac and Volkswagen come to mind.
