I might be the only person in the world who thought Jar-Jar wasn't all that bad. Even the original trilogy was full of quirky and insipid characters that only added to the charm of such an inviting and generally tolerant galaxy (R2D2 was dumb as hell); like the fact that humans didn't react incredulously to such eccentricities gave an air of galactic community I've always loved about Star Wars.
Don't get me wrong, Jar-Jar should have never been a major character, as he had no personality at all, save for the way he spoke, but the way people fixate on him like HE was what was wrong with the prequels is... dismaying.
Compared to the rest of the expanded universe, Luke's entire coming-of-age story is in fact the most uninteresting, if you ask me. Farm boy finds out he has the shining, so he goes to confront his dad about it. MEH. The life breathed into such a yarn is what's most remarkable, but don't try to tell me the plot and subtext of the prequels was woefully lacking compared to the original trilogy.

See, I always saw the story to about vader’s redemption. But that’s coz I love vader and don’t care about luke I guess. I think the plot of the prequels WAS lacking, in the sense there was too much plot, most of it was stupid, messy and unnecessary, and just uninteresting. Despite the OT not being particularly new or revolutionary or anything, I think the scenes in those films (prior to extra lucas rape) serve a much better, tighter purpose than the meandering mess that the PT is. Too much graphics, not enough gameplay. While the subtext might not be any worse I think the execution of the "text" (almost across the board) definitely is.
That said, I know fuck all about film and film making.

Nothing close to the sort of exposure Jar-Jar got, that is absolutely true. But if they'd had a twilek or an Ithorian on board in place of Chewbacca? Well, it would have been annoying, but people wouldn't have bitched as much because nostalgia darlings wouldn't have given everything the hairy eye.

No, you're right. The prequels definitely wallow in their own filth, and the terrible dialogue just intensifies the threadbare plot. The original trilogy at least had great (if campy, or at least camp trendsetting) writing, in that you ought to have been aware it was a space opera western, and the fantastic craft behind presenting this was... well, yet to be surpassed, in my opinion.
