i like to roast/grill them first to get the skin off, and brown the meat before. Goat cheese, ground fresh chorizo, chunks of roasted butternut squash, onion, garlic, all stuffed in a roasted pablano pepper. I usually make a tomato and cilantro sauce, but i only put it on when i serve it...a bit on the bottom of the plate, and some on top then pop the pepper's "lid" back on to make it look pretty.

Ah fuck that sounds fucking good. Yeah Hungarian is all about the paprika...and the tomato sauce really. It's served with sour cream too. Dollop of sour cream on everything always, lol.
Whenever I think of Hungarian food I think of onions, peppers, tomatoes, and paprika, lol. Typical gulyas is all those ingredients, plus some Hungarian or Polish sausage.
I fucking love Hungarian sausage. I love letting it sit in the fridge for a couple days and drying out a little...and eating it with some nice rye bread and sliced green pepper. So good OM NOM NOM.
Shit now I wanna picnic.
