Ok the sandwich is called "The Verona". Here is the recipe...one large eggplant can make about 3 of these sandwiches.
Ingredients:
1. 1 eggplant
2. fresh garlic (finely chopped)
3. feta cheese (I bought the tomato & basil flavored kind)
4. marinated artichoke hearts (I used one small jar and it was enough for
2 sandwiches)
5. one loaf of french bread (you'll need butter or margerine for it when you toast it in the oven too)
6. a bag of sun dried tomatoes
and of course some salt and pepper and any other spices you might want to add yourself like oregeno, etc.
the eggplant needs to be roasted. you can do it on the grill (shorter time) or in the oven (about an hour). preheat gas grill (or oven) to 350 degrees F. cut small slits into the eggplant (wide enough to be able to stuff some fresh garlic in them). rub the eggplant down with olive oil and stuff slits w/ chopped garlic. grill until black on the grill (about 15 min) or on an oiled baking sheet for about an hour. when finished, cut them however you
want to arrange them on the sandwich.
to cook the sun dried tomatoes, just put them in a small pan w/ water (enough water so it will boil but not too much). cover and simmer for 8-10 in. they will soak up most of the water and become soggy. after this, add the marinated artichoke hearts along with only some of the marinating juice/oil for extra flavor. this is when to add whatever other spices you want. i threw in some salt and pepper and some of the chopped garlic i didn't use. cover and keep on low for a few more minutes...just so the artichokes get cooked a little.
you can bake the bread in the same 350 oven or on the grill. slice the loaf to the size you want the sandwiches and then cut those slices in halfs open aced. spread butter on each slice and then add some of the chopped garlic lso. bake the bread for about 5-7 min or to your liking. when the bread is done, put the feta cheese on first and then just add the eggplant slices and the tomatoes and artichokes and the leftover juice/olive oil from the an as dressing. it's really good! i hope you like it. let me know how it urned out.
