i second xpander, nobody's home, finished symphony and many others that have been stated.
pretty much every song on Danny Howells GU 24:7 Disc 1 is very cleverly constructed and is an awsome song. Definatly check that album out.
also two other Albums you may really like with some clever songs are Sasha & Digweed's Northen Exposure 1 and 2 (the first CD's from both compilations).
they have some cool songs. some of my favs. that stick out are finished symphony as stated above, frontside - dammerung, gus gus - purple, future sound of london - coscade, rabbit in the moon - out of body experience

Lots of Sasha tracks are very well layered & constructed.. Xpander, Rabbitweed, Belfunk, Fundametal are all great.. also Jam & Spoon - Stella[Nalin & Kane remix], Vincent de Moor - Shamu[Armin mix], Kamaya Painters - Endless Wave[Albion remix], Moby - Extreme Ways[Tiesto mix] and Goldenscan - Sunrise[Ronski Speed remix] are all nicely constructed tracks.

I agree, Charlie May and Sasha tracks are really well constructed, the flow and progression of lets say, Expander, is mind blowing - the layers are perfectly placed, and respond really well with one another, a very very "natural" feel with this track!
