I'm no fan of NI, but I made a post about Reaktor a couple of days ago - Reaktor isn't really a synthesizer, it's a synthesizer factory. If you're looking for something that's easy to simply crack open and start experimenting with, you definitely made the wrong choice; however, considering what it is, I think it's a reasonably well-designed UI. It's not a Moog Modular; it's more like a pile of audio-related circuit boards and wires, and it's quite easy to "assemble" something in it.
Unfortunately, HCI design is terrible in general in the audio world. Knobs are a fine affordance on a piece of physical equipment but completely unsuited to mouse/keyboard control, and yet they are everywhere, primarily because designers are just trying to mimic the look and feel of physical gear. Affordances that would be clearly superior on a computer, like X/Y controllers and other canvases, are comparatively rare. Keyboard support is often nonexistent.
It's just something we have to deal with as producers. And it's one of the great things about designing your own synths either from scratch or with a tool like Reaktor; you get to make your own UI, one that's suited to your personal tastes and work habits.
