Say I have a stereo VST like Albino playing a bassline, or Battery with the kick. Since I'm not seeing how to designate a stereo instrument channel in Cubase to be mono, is it worth it to bounce the channel down to mono audio, and use that instead of the original VST instrument? Its just nice not to freeze channels if the CPU load is fine.

Yes, bounce that track down to mono. No point it being in stereo if its going to be mono in the stereo image.
