But I wouldn't kill or have someone else kill the horse so I could.

Raw bloody flesh actually has more nutrients than cooked meat.
Cooked meat is often seen as tasting better and being healhier (due to burn off or boil off of potential bacterial contaminants.
Just remember heat causes denaturation of protien.
and blood is healther than milk... (but seen as more dangerous for the potential to carry diseases (you don't want to eat a diseased animal period regardless) You have to be 1000x more cautious with blood. Also apparently it is an irritant to the stomach ... so a lot of blood can cause digestive upset. Raw flesh could therefore contain raw blood upsetting the stomach -- if enough was eaten as opposed to cooked meat that will likely have the blood burned off, or changed in nature slightly.
Blood IS safe to drink but the chance of disease transmission is magnified incredibly.
drinking cow blood is an ancient custom in some of the oldest cultures.

Do note I was once a very strict vegan however my own dietary code has evolved to insure best use of a deceased animal - as to do the animal honour. I still don't support the butcher or mistreatment of animals.
