no, my task was really an orchestrator at the time but I was sometimes given tasks when the composer was busy and since the head orchestrator was not really that gifted at composition, he passed the buck along. You would not typically have such unrelated compositions in a score but the bit I mentioned was the cliche backdrop of a swank gala. They could of just used a recording but the sync licence and royalties paid as opposed to paying a string quartet who typically are already there to play something in one take during some technical downtime is much cheaper.
But yes, most composers will do research on a certain style of music they are not 100% accustomed with and steal bits here and there. This is everyone from Hermann to WIlliams. I wouldn't say verbatim rips but the genesis of the material and the source is quite clear and the composer won't lie about it. It is a business and when you have such little time to do something, you have to make things easy on yourself. It is also very team oriented. If the composer isn't great at jazz composition, he isn't going to spend a week learning it, he finds someone close by whether it be an orchestrator or a performer and they just get it done. Of course if the whole score is jazz, well he would probably pass the job to a colleague that does jazz scores.
I try to be as creative and original as time permits. But towards the end of a large project, you aren't sleeping for a few days. It is quite an experience . Everyone is just about to explode and you just internalize every single thought and emotion or you will start fist fighting the closest person.
