I've never had it tartare, but raw steak is pretty unappealing to me.

not exactly the same cut of meat in most cases bas.

It's still beef. I don't see how grinding it up makes a difference. I'd prefer a pink burger to anything else for sure. I think it's harder to cook a perfect burger than it is to cook a perfect steak.

Oh I misread that, I thought he said he didn't like pink/blood in any of his meat.

I think it's the idea that since the meat is just put through a grinder, it's more likely to have picked up any kind of bacteria, and also the quality of the meat is worse to begin with.

carpaccio is better than tartare imo.

raw anything is win done right.

In winter try steaming them on a bed of kelp and onions...i'm not even joking...steam the cheese right on them too! they taste awesome.
