The videos don't merely "make fun" of the prequels, they meticulously eviscerate any defence of them on practically every level of cinematic craft. Suffice to say that you're very, very wrong to suggest the plot is anything close to equal in the two separate trilogies, and there's roughly 270 minutes of detailed criticism to show you why.
As for the subtext... the original trilogy was intentionally concerned with very straightforward and archetypal struggles and themes. The "magic" of the original Star Wars films is how they neatly distill the essence of universal feel-good storytelling in the spirit of epics, fairytales and other ancient narratives. The prequels, by contrast, are primarily concerned with the descent of one character from good to evil, with his redemption (as PKC rightly says) dealt with in a subsequent narrative triptych. This is not time-honoured archetypal thematic material nor is it a classical narrative structure, and Lucas is extremely clumsy when it comes to handling a darker, more unconventional dramatic arc. That is the core reason why he gets lost in his awful, awful plots about trade disputes and intergalactic senatorial scheming, why none of his characters are memorable and why all his dialogue exists entirely to drag the limping, heavily deformed storyline along toward its grim conclusion: the controlling idea has gone, and there is nothing left in its place.
