upper back definition on females in my opinion is very attractive. lean enough to see visible muscle strands, this doesn't mean bulky hunched over women with lat delts the size of bowling balls. I'm talking definition in the rhomboid minor/major, teres minor/major, and delt to trap areas. normally with a clear spinal definition.
i hit these with resistance / cable, cross body pulls with no cable grip, just holding onto the cable stop-ball.
agree with nrg on the palm out wide grip pull ups, really nail into those lats which will give you that V.
