some people prefer it to be well done =)

you are talking preference versus a cooking style, a true factual cooking technique is to let meat rest before cutting/serving it

i know many people who do not like any blood in their meat and choose well down.

very true. unfortunately, i don't really think there are that many amazing restaurants in miami. it's all messed up. so many restaurants get confused with being great simply because the atmosphere and location are nice.

the only way to get an amazing steak is to go to an argentinian steak place in miami where u can get chirasco and mashed potatoes. there's a place in downtown miami called Zuperpollo that does all kinds of latin BBQ and they have the best chirasco. it's a real mom and pop type place and there's a big fat cuban guy who plays the piano and sings latin music on the weekends.

the best filet i ever had (and still get when i go out for a steak) is at this restaurant i used to serve at called J. Alexander's. it's not even THAT expensive. i think the filet is only like $24 and everything else is a la carte, so u can definitely rack up a bill there if u get a bottle of wine and all that, but i've gone there with my mom before and we each had a glass of wine with steaks and our bill was only like $60 or $70. anyway, i know how that kitchen is run and it's the best around. really good quality beef and all that. they put steak butter on top...so damn good!!

now i'll wait for the flames on this one since i'm not a floridian but from my many experiences down in miami/southbeach/keybiscayne/keylargo etc (i visit FL quite often - business and pleasure!), I'd have to say Joes does a really swell job preparing and serving their seafood. Beef is beef, but once you start playing with shell fish, you really need to learn how to cook.

Anyone can grill a steak, i think it takes an art to make really good seafood. =)

smith & wollensky is ok. went there one time and they overcooked my filet. i'm sure it was an isolated thing because i was with my last firm and there was like 17 of us at the table, so...

Whenever I order steak at a new place, I always order it alittle rarer than I want it because different chef's cook differently. Ive ordered steaks Medium once, and it came practically well done... of course I sent it back.

no you have a point. there are definitely some pretty good seafood places down here. and you are 100% right about joe's.

at the same time, i'm not some big baller either, so i'm sure there are a few really upscale restaurants i haven't been to or heard of yet you know? but i have definitely had the opportunity to eat at a lot of "fancy" places in south florida, and it's been my experience that the food was always just "pretty good".

i think there are better restaurants in ft. lauderdale than miami to be honest.

there's a seafood place in ft. lauderdale called the 15th Street Fisheries and they're pretty decent. king crab legs are like the size of baseball bats and sooo good!

i HATE when im with people and they send back food. just eat what yer given! unless you get something you didn't order. but whenever somebody does that i feel all embarassed cause my friends trying to be a snob and then i gotta eat while theyre sitting there with nothing and im starving and don't wanna wait...

vlad, if we ever go out to eat, just order medium rare and trust me that the place will be good.
