Kanye didn't produce Touch The Sky, Just Blaze did. However, sampling oldies or soul tunes and pitch them up or down has been done in hip hop for ages, it's a very hip hop thing, so to speak.
Personally i really like Kanye West, i like his productions, it's good music. He made a tune on Lupe Fiasco's album, "Cool", it's fantastic. I like him as a lyricist too, he doesn't spit the most intricate rhymes or the most clever lyrics but there is just something catchy about his voice and his delivery style, he sounds a bit mindless. Some criticize his flow, or lack of, the way i see it he has a decent flow but you can hear he has like a hard time keeping it up. That way you can feel the effort he puts into what he does, and that gives a genuine feel to his raps.
The music aside, he probably is an idiot, but i can't say i care. I don't like peoples music because of how they are as persons. I don't know the persons of whose music i listen to, i don't want to and i don't need to know them, i don't care.
