i guess quebec has to feed the socialist machine somehow!
North American tipping culture is ridiculous. To the point that its now an expectation and NOT a gratuity. Its so expected that the whole system is based on its assumption!!!
My tipping scale:
Horrible service 0% (and if he/she has to pay for it then even better)
Bad Service 5%
Average service 15%
Great service 20%
Exceptional service 25%
The extreme ends of the scale happen about once a year each.
And i base it on servers attitude, professionalism, going the extra mile etc.
If the food sucks but the waitress is professional, kind and goes out of his/her way to make up for it, i dont punish them for it for example.

$100 tip for 3 hours service since they stop serving drinks at 2 isn't that bad

Granted I've only worked in one restaurant, but that's total bull. We each had a tax booklet that we had to fill out before every paycheck. It was then handled by the owner so yes, we did in fact declare all our tips.
Also re: sharing with kitchen. It depends from one place to another, no two restaurants have a completely similar tipping set up. Our kitchen staff got paid well and the tips were then pooled and split even between everyone working on the floor.

Yeah I understand that, but again that is not my issue. That is an issue between the employee and the employer. They should pay the employee more money. If they don't, well again not my problem.
The excuse is used that all services would cost more and in restaurants the food would cost, etc if the people were paid more. Well fine then raise the price of the food/service. I just don't like the feeling of guilt put on customers to feel like they have to subsidize the employees wages.

So then I as a customer am expected to pay for the servers wages?? That is absurd. And again that is not the customers issue. I go to a restaurant see the price and that is what I expect to pay plus taxes.
As an aside...even though I hate the idea of tipping, I do tip. I understand that all these people rely on tips, but do not agree with it.
Standard tip will be between 10-20%, dependent on service.
