I had been lifting weights prior to this spell, but I didn't stop doing them and it takes more than three months after stopping weights to lose the muscle I did in that time anyway. Cardio does not simply burn off fat and leave muscle with no complications.

Fledz asked how to burn fat, not lose weight generally. So avoiding muscle-loss would be integral to the question. Although I don't know why you're operating on this "average joe" assumption, given the people involved in this discussion.

I eat the same thing, every day, at the same times. This way, if your diet isn't working, you can tweak it and know what is going on. Furthermore, if you find yourself getting hungry at some point during the day, but not others, you can take calories from other meals and put them around the times you get hungry.
In following the diet above, you should be aiming for 33% of your calories from fat, 33% from carbs and 33% from protein. The fat acts like a buffer and slows the digestion of the carbs. It's also a longer-lasting fuel source in itself.
If you guys aren't eating cottage cheese before bed, you should start. It is, hands down, the best food to have before sleeping - it takes about 6 hours to digest.
