It isn't difficult, but it wastes a few seconds every time you make that meal. And I'll bet good money this isn't the only meal you do it with, and that you're like this with lots of things around the house. I know other people pointlessly obsessed with tidiness and appearance, and they end up wasting hours of their week just tidying and ordering things for no reason.

I think it's pretty stupid to enjoy staring at the pattern of food on a plate in the first place. Do you eat the tomato slices sequentially, and get enjoyment out of that too?

That's an interesting statement for two reasons:

a) Us tidy people have a similar view of messy people. We have trouble understanding why you can't keep control of your surroundings, and see it as a problem. Of course, your answer is easy: "it's pointless."
