I've been to one high end sushi place twice, and I got wasabi served on the side. Think it has to do with catering to your audience. Almost all sushi bars in America, even the 4-star sushi place I went to, serve imitation wasabi. Which is why I don't care if it's rude to mix my fake wasabi with soy sauce. When they bring out the real wasabi and a fine grater, I'll be more respectful.

P.S. pickled ginger should be white not pink.

Oga's outside of Boston is probably the best sushi restaurant in New England, and the best I've ever had.

I made it a tradition to go before big club nights. While mixing 20 pieces of raw fish with 4 hours of dancing is not the best idea in the world, it was always worth it in my book.

And for another piece of sushi-etiquette:

You're only suppose to use soy sauce on the lighter fishes, not salmon, tuna, etc.

gotta love the philly roll....salmon, avacado,cream cheese.....ahhhh man dammit now i want sushi...FAKKKK. Looks liek im getting some tomorrow for lunch.

Also a good one is spider roll...fried softshell crab, cucumber and scallions, at least at Morimotto's in philly.

pshh...when i used to visit my uncle in the bahamas years ago, we'd go snorkling and spear fishing and catch fresh snapper and tuna. instead of cooking it, we cut that shit up and ate it raw with soy sauce and wasabi. doesn't get more fresh than that.

There's nothing fresher than right out of the sea. The season finale of Top Chef showed the remaining two chefs plunk a sea urchin out of the water and serve it up for breakfast. What did you do with the rest of the tuna?
