the best pizza always has a thiner crust.
the place i get it from just puts a little fresh mozza (little chunks from the ball not shredded.) and a little provalone.
fresh tomato sauce (key to a great pizza...if it comes out of a can fail)...so easy to make. Red wine, garlic, minced onion, fennel(seed), basil, oregano and strained tomatoes simmered down for a few hours.
too much cheese hides the flavor...every bite on the pizza should be unique imo.
edit: blanche the rapini a little bit...it will cook in the oven, but if it is over cooked it becomes stringy.

The Kebab places are also pretty bad there, normally delicious Doner Kebab is cut striaght from the skewer into a crispy bread or pita/lafa. There it's already cut then heated up in some sort of microwave/oven? Also horrible ingredients. Plus it costs fucking 6 Euro by now. Best Kebab is obviously in Berlin but also here in Vienna.

Wow, how terrible for you.
A: When it comes to the Kebab shops, all are not created equal. There are plenty of good ones, you just need to find them (and that isn't particularly difficult).
2: Amsterdam's "New York Pizza" was fine considering the circumstances (i.e. being high as shit and wanting something cheap).
Never said it recreated the wheel, but it did what it was supposed to.

the best is when people forget to put flour on it and ruin their pizza by making it stick...it is funny when they try and serve is as something other than pizza to cover their mistake.
