The 2002 remakes of Final Fantasy I & II have an excellent soundtrack. Out of the two, I like FF2.
The FF: Dawn of Souls remake of FF1 and 2 (2004 release for GBA) had pretty good battle soundtracks, esp. in FF1 when battling against the final boss, Chaos.

I don't really like FF8, because of the Junction system.
My favourite out of all out the classic ones are VI, VII and IX.
I heard somewhere that Square Enix are remaking FF3 (Japanese FF3, not FF6) for the Nintendo DS. Is it a rumour?

can't confirm the ff3 jap. remake for DS but I've heard about it as well. As for FF8, the Junction system is amazing. It was a big step out of the standard systems in the FF games to provide a level of customization that's hard to see still even with the new games. The general plot may stink at times but the system itself allowed for a lot of personal adjustments rather than having to fall all under the same infrastructure the other games have/had. (I don't mind the standard hp/mp system either; I'm just saying that it isn't worthwhile to bash the Junction system because it did its job of breaking out of the norm at the dawn of the new console at the time and let players do what they want with their characters stats to a painstakingly customizable degree).
