This is the game I thought you were talking about...
The only game that I can think of where you play an evolving creature is Black & White, but that game is more a god-simulator game and I don't think it really fits your description.

Marathon: Infinity
One of the best shooters ever designed for its time. Best player-created-content community I have ever seen. Most developed and complex storyline I have ever seen. Halo's predecessor, pre-Microsoft/Bungie mashup.
Also, some of the most ingenious level-design I've ever seen (by its creators and by end-users) considering the limited capabilities of its "2.5D" engine, by using engine tricks, 5D space, etc.
Not as well known as it could've been since it was a Macintosh only release. (That's right, a Mac-only FPS.) Marathon 2 (only) WAS released for PC and the engine has since been open-sourced and ported across platforms.

used to play that and the baseball game all the time at my nans house.

Yeah, I saw that... Marathon 2: Durandal, if I recall. I looked at some YouTube footage and it looked completely different. :/ I might check it out anyway though.

I played the demo, and I can't really vouch for things that were changed because I never played the original PC version. All I'll say is that those "changes" you noticed were probably to adjust the game to the 360's HD capabilities. I can't tell you for sure, because I don't really know.
Strangely enough, right around the time of Marathon's XBLA release, several reports from gamers throughout started hitting the web about cases of motion sickness. Apparently the game had such a smooth framerate that it was nauseating. How weird is that?
lol, that's interesting. Definitely wasn't a problem on the old ones.
And yeah, the new game appears to be using 3D models and stuff instead of sprites, so of course it will look different. I'm sure I will still check it out, though. Once I actually get my Live account again.
