You could probably skip the parsley and not notice it much, I just find it adds a bit of robustness to the flavour, adjust the rest to how you like, some people prefer a chicken stock but I'm not so keen on it. I like a little bit of a mild chilli taste to it to keep us warm over winter

Brown the onion an garlic in the pan, add in the tomatoes stock and extra water if needed and bring to the boil, then leave it to simmer for about half hour, 45mins or so.
When its cooled off puree it and mix in the sour cream

2nd bit

2-3 x potatoes
handful of shredded cheese
1/4 cup of milk
1x tablespoon of rosemary
1x tablespoon of mint
Boil/nuke the chunks of potato, mash them while adding the milk until you're happy with the texture, then mix in the cheese.

Reheat the soup until its hot, them put it in a bowl with a big dollop of the mashed potatoes in the middle.
It costs barely anything

That's not a crappy recipe! That's a, well, a proper recipe!
