I'm not sure of any sources here but I learned a little bit about this in my anthropology course in college. It's been a while so I don't remember exactly how it works. They have names for each gender too.
3 gender system:
Male - Neutral - Female
5 gender system:
Male - Male with female tendencies - Neutral - Female with male tendencies - Female
7 gender system:
Male - Male with female tendencies - Sexual male but mostly female - Neutral - Sexual female but mostly male - Female with male tendencies - Female
