I suppose as an enduring image of trance and its evolution, Café del Mar is the one. Just listening to the mixes chronologically basically tells you the history of trance from 1993 to the present.

Yes, that's true. Few other themes, if any, cover as much ground as Cafe del Mar. Though I don't hear any psy mixes of it... yet.

One or too people here mentioned Odysee of Noises. I've got to say that that's about the most all encompassing track I can think of. I could hear it in just about any set out there. Except maybe psy or goa. And it couldn't work in hard trance, either, I don't think. Either way, the slowly changing timbres of the melody, and the slow layering, at the very least, define one of the most perfect trance buildups (as in, across the entire track) I can think of. The key to Firedance is that the melody never stops playing once it starts, although it does go into the background.
