It sounds to me like you actually like this girl, but are letting your insecurities make her hypothetical future choices for her.

If you like her go out with her, and let her decide for herself that you are not her type. The way you describe her (specifically the comments that she is way out of your league) make her sound like she is a good catch.

Let's be real, finding a woman is not hard. Finding an educated woman that has a lot going for her, is very attractive and is very interested can be.
