Rejection is hard to take no matter who you are...unless you're pumped up with a crapload of drugs or whatnot.
Because my view on life is to ultimately have faith in humanity, I'm gonna say you're probably still thinking about her because you wish you could go back and change what you did, for what now seems to be the better choice.
In life, we move on a timeline at a constant rate. It doesn't make too much sense to spend a great deal of time remembering past mistakes (or past successes for that matter). Things in the past have already happened, and will not change. Ever. The things we've done will remain as they were, forever. I'm not trying to bring you down, I'm just trying to say that if there's no possible way to go back and change our actions, then why should we spend time worrying about what we did? We should take what we can from those experiences and move on, since it's impossible to take what we can from those experiences and go back to change them. Things like this that are out of our control don't deserve so much of our time that we think about them constantly.
If you're still thinking about her, it probably means you're still left proverbially hanging, that is, you haven't really resolved this. You should talk to her, admit your mistake, and get a response, then decide what to do. I don't mean to criticize, but a letter isn't always the best method of communication, especially in this instance where you have to keep waiting for a response. Better to talk to her directly so your mind will get some peace.
Like I said, take what you can from this situation and try to apply anything you've learned onto future events.
