The mall can be good if you go in with the right attitude (ie: make fun of EVERYTHING and go into any store to find more things to make fun of), you're not there to buy things, you're there to interact with your date. I took a girl to a Chapters/Starbucks for coffee and making fun of books and she talked about it for MONTHS afterward because she was used to the typical dinner/movie first dates that guys kept taking her on. well, making fun of things is good in moderation. you don't want to come off as a negative/judgemental person either. if i went with a guy and everything we looked at was funny or was stupid to him, i would not be impressed.

if she wants to actually shop, that's fine too. maybe it's for a particular sweater that suddenly went on sale and it makes it that much more special if you ever end up dating long term. (this is the sweater/jean/hat i got on our first date).
