Apple & Cinnamon Scones
Recipe Makes 12:
2 cups self-raising flour
30g butter - cut into small pieces
1/3 cup caster sugar
1 green apple - peeled & grated
1 tsp ground cinnamon
1 egg - beaten
1/3 cup milk
1 Tbsp caster sugar - xtra
1/4 tsp ground cinnamon - xtra
Preheat oven to very hot (220*CD). Place flour in a bowl. Add butter and rub in using fingertips.
Stir in sugar, apple and cinnamon. Combine egg and milk. Make a well in the centre of mixture.
Pour in liquid all at once, reserving 1 tsp.
Mix to a soft dough. Turn onto a floured surface. Knead lightly. Press or roll out to form a round
about 2 cm thick. Cut into rounds using a floured plain cutter. Place on a greased baking tray.
Glaze with remaining liquid. Sprinkle with combined xtra sugar and cinnamon.
Bake for 10 - 12 minutes. Cool on a wire rack. Serve buttered.
