I use Spin Doctor that came with Toast Titanium. it works pretty well but i have a feeling that there are probably better programs out there. Spin Doctor 2 has some cool features but my Mac is getting a bit old and doesnt run it very well.

Pro Tools is wonderful for recording considering it is the professional standard if you wanna spend a little bit of money you could get a pro tools mbox to record stuff with.

I found a program called Amadeus II on tucows.com
It's free to try...$15 US to buy. I might buy it as it works pretty well.
When you save as .aiff it doesn't take an eternity like pro tools free does.
