Yup, you should use LAME 3.90.3
As for EAC, just get the latest version.
And to get EAC up and running follow this easy step-by-step guide:

EAC will make the cuesheet for you. If you like you can insert a CD and press the freedb button (or the ones next to it, I keep forgetting ) and it will automatically get you the artist and tracknames. Or you can add them manually, but that is more time-consuming.
Then if you choose 'Action -> Copy image and create CUE sheet -> etc.' it will start ripping the CD, make a cuesheet and put the artists/titles for you in the cuesheet. After that you can edit the cuesheet (change the artists, titles or whatever) yourself if you wish by opening it in for example notepad. But this last won't be necessary.
Just open a cuesheet in notepad btw...you'll see right away its structure and understand it.

Seeing as you just want to rip them to mp3 and have them as an archive on your HD, you won't really need a cuesheet. A cuesheet can be loaded in i.e. CDRwin or Nero to burn the mp3 to a CD. Or you can use this cuesheet in conjunction with the mp3cue-plugin voor winamp. Just do a search for it
