Agreed, go with samples.
As far as synth VSTs go, Luxonix Purity has some decent sounding piano presets, although nothing like a good sampled piano.
East-West puts out several good piano sample libraries, and the included sample libraries with Kontakt 2 include some quality piano samples.
I also like SampleTekk's "Rain Piano" although my beef with it is that not all notes are sampled. Every 3rd note is sampled, and the sampler presets included simply octivate the samples to cover all notes. This is obviously not the best method, but in the same respect keeps memory and disk utilization down, and a good sampler will handle the octivation well. There is a neat sound to this sample package. It is from a custom-tuned sweedish upright with the center string slightly detuned to give in a unique character.

You might have a look through HammerSound's piano soundfont library, they have some piano soundfonts, although most are generated from synths. Still, you might find something suitable for your project.

Sampled piano gives a much much more realistic sound, for example i like the grand piano samples is reason 3.0 using the NN XT advanced sampler
If you want a decent piano VST the closest i can name is "Dimension mini piano" this can be run throught SFZ and is a .sfz file but you can use it like any other vst plugin... It is a realstic sounding piano although it may be a bit flat in my opinion, better than any synth piano sound though.
