The ZOOM H2 will record 4 channels, but only in microphone mode. the minute you plug in a line level input, you're stuck with 2 channel recording. i was pissed when I figured that out.
Also, in regards to recording a line level and a stereo microphone to get the 'room' sound... I anticipate that you'll have some pretty nasty phasing issues... the dry record out will come straight in, but the house sound will be delayed through the PA system and coupled with the resonance of the room, the two recordings won't be in 'sync'. you'll really have to be a wizard to get that sounding great together.
