If you're already using Serato, you might as well continue. If you really want to play on CDs, you could play it off of the CD drive with Serato (I think it supports this feature). I think it's much more enjoyable to play on turntables than CDs, and I'd stick with what you have since it's sufficient for your purposes.
You do have a valid point about playing out, though. I'm sure most everywhere have CDJs, and they are much less of a fuss and less maintenance- a big plus for venues.
I know I'm not really adding much about the technical aspects of CDJs and Serato, but I'd go with what your gut feeling is. I would see if I could try CDJs out to see if it scratches your itch or to see if you really like them.

In all honestly, you'll miss your techs.
I run both techs and 800 mk2's and even though I love my 800's, I'd miss my tech too much.
The 800's are tight and feel good, but the tactile relationship is just no the same techs. If you ditch the 1200's you'll always be missing something....
