1) It doesn't matter, they all work the same. Personally I don't like cheap keys though so I'd rather spend some money and get something that feels more like a real piano.
2) Why do you need another host? Are you using any VST's or hardware? If so, Sonar or Cubase is a good choice. Sonar has better rewire support, but personally I like Cubase better (although I haven't spent too much time with Sonar). If you aren't using VSTs or other hardware, I wouldn't recommed another host yet.
