ha, never thought of that. i haven't seen any restaurants that plays trance, that's probably because trance is too danceable and it's hard to sit down and listen to it, especially when you're eating. hell, if i were to operate a restaurant i wouldn't play trance either, but play breakbeat, britpop or trip-hop, depending on the restaurant's atmosphere. bars and pubs may play trance, but in a country like Canada, it's more likely to hear "canEHdian r0cK" in a pub.
