personally, i hate remakes.. unless the game is really, REALLY old and almost unplayable because of how primitive it is (im talkin like, King's Quest 1, not FF7).
i think old graphics are what makes the game great, since i love old school stuff. for example, my favorite console rpg ever, dragon warrior 4... got a remake so its all 3d and shit... i am so glad it didnt get released here, so people have to play the old looking version. i think it ruins part of a game's nostalgia and in general, the game itself, by remaking it so newer gamers who are used to fancy graphics wont complain about it so much.
i think theres nothing wrong with re-releasing a game on another system, so, for example, people who dont want to buy an old SNES and spend 50 bucks on FF6, can now play it on their PSX... or, id be fine with them adding the analog stick option to FF7 so you dont have to just use the 4 way arrow keys to run. but completely redoing a game for a younger generation? lame.
