Yeah, Brahms 3rd Symphony [and also 4th] is amazing, would be one of my favorites of time. In terms of works in a symphonic scale - Mozart's 25th Concerto for Piano and Orchestra - one of Mozart's most under-rated works.
In terms of solo pieces - Bach's Goldberg Variations no doubt! 
If I had to pin point two pieces - those would be it, but of course, there are MANY more that have a special place in my ears - ranging from different periods; 20 centuary, Romantic, Impressionism, etc.
There seems to be alot of classical threads these days, and I seem to keep replying with the same answers hehe
