Well really, its personal preference, theres no set way to do it, you just find a way you like and keep doing it, but that being said, there are certain situations you might find yourself in (if you play out) that you will be in trouble either cos of a bad monitor/setup, or that the mixer doesn't support your way of monitoring in the headphones, the "old skool" way is, one cup playing only the cued up track, and your other ear listening to the club monitors, but now that we have many good mixers available, you will often find a mixer that supports all the ways headphone monitoring, but if you wanna be safe, learn to DJing with one headphone on, mix in headphones (stereo signals mixed), and split cued in the headphones, and then you'll be ready for anything.
