Hey Jah congrats! And yeah you're being paranoid it's absolutely normal for the record to be spinning up and down; it's the record, not your turntables!
I have my antiskate tuned to around 1.0 and my counterweight set to 1.5, sometimes a little more when I am doing a recording. Hope that helps, and congrats!

Congrats on your new technics! About your carts being to low and seem to tear away yer vinyl what you should do is adjust the weight on the tonearm so its got less weight, doing this will hopefully make your carts not tear away your vinyl and your carts shouldn't be that low..just experimenent and i'm sure you will get it

its all trial and error my friend.. btw, congrats on the decks!... anyways you don't too much weight or it will start to fuck w/ ur vinyl.. but on the other hand u need enough so that if someone bumps ur table or anything, ur tone arm won't go flying off the record!

hi thanx guys!
with the pitch if i bring it down slowly (realy slow) you cant tell the differance but it is speeding up however if i shove the pitch slider say right down to the bottom theres like a half a second delay before it brings the pitch right up is this normal? thanx!

yes this is normal.
which ortofons do you have? concorde? nightclub?--either way, the Height should be set to 0.5 for ortofons, then u find the balance point, add 2 Gs weight, put antiskate same as weight(2) and you are set.
