I wouldn't bother checking the pitch on your 1200's, it's not that. 1200's hold their pitch better than any other turntable.
I expect what it is, is that the first time you did the mix, you actually corrected it quite a lot while you were in the mix, and so it was never actually *exactly* on beat, and after the succesful mix you just assumed that it was perfectly matched when it in fact wasn't.
I'm afraid the only answer is more practice
