Producers whose tracks have a lot of little elements going on that really reward headphone listening. I don't mean just piling up a massive amount of repetitive layers, though. I'm thinking of guys like:

Way Out West. The amount of detail they put in is incredible at times- snatches of music or samples that only crop up once or twice in an entire track and placed at key places. Listen to Domination and the detail in every section of that track is incredible.

The only one I can think of right now is Trentemöller. His usual dancefloor cuts might not be that much detailed, but listen to 'While The Cold Winter Waiting' or 'Always Something Better (Non-vocal version)' on his album and prepare for some aural sex.
Also, Telefon Tel Aviv, but you said no usual IDM suspects

I have to agree with Trentemoller. His Last Resort album was far from being dance floor driven, yet when listened to while lying down with cans on you can really get lost in the different textures he bleeds in and out.
