It's simple, we control the reproduction of cows. This has nothing to do with dolphins being cute. It's the fact that 1) they are a lot more intelligent that cows and b) that we have no means of controlling their population.
In fact many would argue that there are too many cows and sheep in the world today.

The cow will probably be eaten as well, do you believe all that dolphin and whale meat gets sold? not only is it not healthy due to the high content of fat and mercury (since these animals feed on fish, they develop high mercury levels themselves), but there's other sources of fish that won't eventually become extinct that can be used for sushi instead.

You cannot justify us killing cows being the same as killing dolphins.
Cows have long being domesticating for food. They are bred in captivity, reared and then killed. Numbers are controlled and tracked.
Dolphins and Whales and even fish are wild. Its free game to go out and harvest the seas of them. Numbers are often not regarded as we do not have a definite idea of how many are in the wild.
At the current rate of decline (if consumption of fish stays the same) we have enough fish to last us until 2045. But for most governments because fish are not captively visible like on a farm they are out of mind.
Hence why I stopped eating fish over 2 years ago.
