Meat prepared a certain way. It usually involves flattening the meat with a "hammer" type device. The result is then pan fried/ seared (don't know what is would be called exactly). There are plenty of variations. The Wiener-schnitzel is made from beef (Calf actually) instead of pork (which is cheaper and more common) and distinguishes itself that way.
The prefix usually indicates the type of sauce that the schnitzel is served with:
Jaeger (hunter) - white/ beige colored mushroom cream sauce
Zigeuner (gypsy) - spicy red sauce with peppers
Zwiebel (onion) - with onion cream sauce
more often than not, the schnitzel is battered, though it does not have to be (this is a common misconception).
